PROGRAM 1 - 'VIETNAMESE STREET FOOD TOUR'

cooking_class_img_4758x Unlike in the West, ‘Street food’ in Vietnam is regarded as a treat rather than a fast food. Participants learn about this tradition & how to make some of the dishes. Beginning with a one-hour street food tour, participants then go on to see a cooking demonstration at our ‘street food’ counter, before tasting the dishes themselves. Students taste Crispy Hoi An Pancakes, Cao Lau, Pork Skewers and Banh Cuon. The recipes are provided for participants to take home.

Students gain hands-on experience of Rice Paper Rolls, Soup with Cabbage Leaf and Shrimp Parcels, Chicken with Lime Leaves to be grilled, Mango Salad and Crispy Hoi An Pancakes. PROGRAM 4 - GOURMET CLASS WITH MS VY

cooking_class_img_6480 The class begins with a market tour, followed by a practical and theory session taught by Ms Vy. This class is for the professional or experienced – for those with a passion to learn real Vietnamese cooking, and those wanting to increase their knowledge of Vietnamese cuisine. Subjects covered include: choosing ingredients; cutting techniques; Vietnamese food history, philosophy & nutrition, and food medicine. This hands-on class will also suit those aiming to solve Vietnamese cooking challenges or designing menus for their own restaurants. Five Vietnamese dishes are prepared and cooked - Spicy Seafood Noodle Soup, Papaya Salad, Pork Skewers, Fish in Banana Leaf and Stir-Fried Morning Glory.
